Introduction

The Bachelor of Science in Nutrition option is an interdepartmental program. Participating departments include Human Nutrition, Animal Sciences and Food Science & Technology. The program of study is intended for students interested in the absorption, metabolism and functions of nutrients and other bioactive dietary compounds at the whole body, cellular and molecular levels, especially in relation to health and disease. Students are encouraged to participate in research projects with faculty and/or engage in other professional training activities associated with the career path of interest. The program prepares students for admission to medical, dental, optometry and pharmacy schools, as well as graduate programs in nutrition, biomedical sciences, and public health.

Nutrition is an integrated science that requires the student to develop a strong foundation in biochemistry, physiology, and molecular genetics. The program provides students with flexibility for meeting the core requirements in nutrition. Students may enroll in courses that discuss similar subject material in the context of either human or animal nutrition at the introductory and advanced levels. Students also are required to complete a sequence of more advanced courses that focus on metabolic regulation of nutrient metabolism or nutrient metabolism in humans, and to choose several elective courses in nutrition from a diverse list of offerings from one of the participating programs. Finally, all students complete a one quarter internship that is a supervised pre-planned employment experience and/or on-site problem-solving exercise with an approved clinical, industrial or research enterprise.
